Vigil rice forms part of the gastronomic memory of Tavernes de la Valldigna. Traditionally, it is associated with Lent and vigil days, when religious customs limited the consumption of meat and preserved fish, especially salted cod, played a central role in home cooking.

Like many popular recipes, it was born from making the most of pantry ingredients: rice, chickpeas, raisins, garlic, tomato, saffron and paprika. Saltted cod made it possible to keep fish for long periods and gave the dish its characteristic intensity.

The earthenware casserole and the oven are also part of this recipe’s identity. The oven concentrates the flavours, cooks the rice evenly and gives the dish the traditional character that sets it apart from spoon rice dishes or paella.

Step-by-Step Preparation

The key to vigil rice is preparing each ingredient properly before assembling the casserole. The raisins must be hydrated, the meatballs should only be seared, and the sofrito should be full of flavour without burning the paprika.

1Soak the raisins. A couple of hours before starting, place the raisins in water. This rehydrates them, makes them more tender and gives a more balanced sweetness during baking.

2Sauté the head of garlic. In a small pan or deep frying pan, heat olive oil and sauté the whole head of garlic. It should brown lightly and flavour the oil without burning. Once done, remove it and set it aside.

3Sear the cod meatballs. In the same oil, cook the meatballs for just a few minutes. The aim is to set the outside so they hold together, while keeping the inside tender, as they will finish cooking in the oven.

4Prepare the sofrito. Add the drained raisins and cooked chickpeas. Sauté them gently so they absorb the flavour of the oil and garlic. Then add the crushed tomato and let it reduce until it loses some of its water.

5Add the paprika. When the tomato is cooked down, add a little paprika and stir immediately. This step must be done carefully, because paprika burns easily and can give a bitter taste.

6Assemble the casserole. In an earthenware casserole, distribute the rice, the raisin, chickpea and tomato sofrito, the cod meatballs and the reserved head of garlic. Make sure the ingredients are evenly spread.

7Add the water and saffron. Add the 800 ml of water, saffron and salt. If the water is warm or hot, it will help maintain the cooking pace when the casserole goes into the oven.

8Bake. With the oven preheated to 200 ºC, bake the casserole for around 25 to 30 minutes. The rice should absorb the liquid, remain whole and cooked, and have a lightly golden surface.

In baked rice, the final texture depends on the amount of liquid, the strength of the oven and the casserole used. That is why it is important to watch the process and let the dish rest before serving.
